How to read the back of any pack

Spotting palm oil

Palm oil can appear as palm oil, palmolein, or just “edible vegetable oil” without naming the source. If the oil isn't named, ask.

Maida by another name

Maida is listed as “refined wheat flour”. “Wheat flour” without the word “whole” can also be refined. Check which one it is.

Reading INS numbers

Indian labels list additives as INS numbers. Common preservatives include INS 211 (sodium benzoate) and INS 202 (potassium sorbate). Synthetic colours include INS 102 (tartrazine) and INS 110 (sunset yellow).
